Very hazy with light head retention, smells of fresh apples and dough, kinda like an unbaked apple pie. The taste is sweet apple up front with bready malt underneath and a subtle green apple tartness in the background; body is full and effervescent. The finish is long and low in bitterness, with no real hop notes at all, and some of the yeast into astringency of the Canneberge, but hanging over all of it is a mild tannin bitterness reminiscent of apple skins. Overall, I love ciders and apple ales, but this is incredible: the several layers of complexity in a beer that ultimately is a vehicle for just one flavor, and yet is perfectly balanced and refreshing.
