The Mad Elf “stripped” of the cherries, honey, and chocolate malts in the full version. Clear with solid head retention, smells of wheat rolls, caramel, and Belgian yeast. The taste is crisp and smooth with flavors of caramel, toffee, tasted dinner rolls, sourdough, and banana bread on a soft and smooth full body. The finish is long and moderately low in bitterness, featuring notes of clove, zucchini, salted caramel, yeasty funk, white pepper, herbal hops, and banana peel. Overall this is a surprisingly complex beer! Removing the extra ingredients allows the yeast to really shine and provide extra zest and pizazz throughout.
