Just a hint of haze with no real head retention, smells of white wine, grape must, and sour wild yeast. The taste is crisp and bright with flavors of unoaked chardonnay, champagne, and Pinot Grigio on a base of apple, pear, and earthy yeast notes with an effervescent medium body. The finish is long and low in bitterness, though moderately tart, featuring notes of grape must, oak, and herbal hops. Overall, this is a really cool and interesting beer, honestly closer to a white wine with some beer notes underneath, I’d love to see more experimentation with this, perhaps a maltier style base would work? Either way this one is delicious!
