Trillium – Cacao PM Dawn

Flashlight shows a lightly hazy chestnut color with decent head retention, smells of coffee, hot chocolate, and smoke. The taste is smooth and lightly sweet, with flavors of cold brew coffee, milk chocolate, heavy cream, and charred bread, with subtle cherry and blueberry underneath on a super smooth and creamy full body reminiscent of a nitro stout. The finish is long and moderately bitter, featuring notes of coffee, dark chocolate, smoke, and herbal hops. Overall, I honestly think this is the best coffee stout I’ve ever had. It’s perfectly crafted and precisely balanced yet beautifully simple; the point of this beer isn’t how complex or sweet you can make it, but how masterfully can you balance the simple flavors of coffee, an imperial stout, and in this case the guest star chocolate.
