St. George & Fever Tree – “Terroir & Tonic”

Picked up the mini 3 pack sampler of St. George gins, I’m really excited to try them. However, their website has no recipes for gin & tonics and I actually emailed them about a week ago asking if they recommended any particular garnishes; they have yet to respond, so I’m making my own garnish choices here, sticking with classic citrus, in whatever varieties were used as botanicals in the gin.

Smells of sage and rosemary more than the citrus surprisingly, perhaps a hint of the pine tips. The taste is sweet yet herbal and extremely aromatic with sage and rosemary filling your nostrils as you sip. The finish is very smooth and low in bitterness, with notes of the aforementioned herbs, citrus peels, and a delicate balance between juniper and pine. Overall, this is a mind blowing gin; bold and flavorful and unique and distinctly American.
