This recipe actually comes from the St. George website. Smells of cilantro and fresh peppers: Serrano, Jalapeño, Bell; they’re all there, and very potent, the lime and ginger are quite far in the background. The taste is tart and juicy lime up front, with the pepper notes filling in the background; mouthfeel has an extra tingle, I suspect more from ginger than from the peppers. The finish is mild but spicy, no bitterness to speak of really, just pepper and ginger spice lingering on the tongue with some puckering citrus around the edges. Overall, this is an exquisite pairing, the capsaicin from the peppers does grow in intensity after each glass, but it never becomes uncomfortable, and the interplay between the peppers and the ginger is mind-blowing.
