Bombay & Fever Tree – “Sapphire & Tonic”

 

Smells of juniper and citrus, with a soft floral note in the background. The taste is crisp and citrusy with a soft peppery note underneath. The finish is slow and mellow with a low to moderate bitterness featuring notes of citrus peel, astringent herbals and quinine. Overall, it’s a very well balanced and overall mild gin, but I feel it tends to get lost behind the tonic and garnish here.

Hops:Tonic: Congoan Quinine, Tanzanian Bitter Orange, Provencal "subtle botanicals", Gloucestershire Elderflower
Other:Garnish: Lime slices
