Novo Fogo – Barrel-Aged Cachaça

 

I’m familiar with silver cachaça, and actually think it works better than rum in most tropical/tiki cocktails, though this will be my first time trying an aged cachaça.

Smells of hay, lemon, and subtle oak. The taste is peppery and lightly sweet with flavors of honey, oak, and faint orange blossom. The finish is spicy and warm, featuring notes of oak, peppercorns, and orange peels. Overall, this is smooth enough to drink straight, though I don’t particular enjoy doing so and it’s nowhere near as smooth as the aged Bacardi; it’s very oak forward and musty. Mixed in a cocktail though this stuff truly shines, blending with fruit juices exquisitely as cachaça is known to do, but with a nice layer of oak underneath for added complexity. Indeed, a caipirinha made with this is remarkably reminiscent of a Jack Daniel’s Sour. An Old Fashioned is equally enjoyable.

Hops:Aged 2-3 years in American oak bourbon barrels that are taken apart, sanded, and re-toasted
Yeast:Open Fermentation with Wild Brazilian Yeast
