Clear with no head, smells of crisp apples with lots of tannins, and a subtle sweetness beneath. The taste is sublimely sweet, perfect without going overboard, notes of apple, honey, and oaked wine with a medium body. The finish is semi-dry with some residual tannins from the bittersweet apples bringing just the right level of astringency to balance out the sweetness and invite another sip. Overall, this is an excellent cider, the best of the Cider House Collection in my opinion and one I will definitely be having again.
